Caseificio Antonio Garau dal 1880 Since 1880 the Antonio Garau Cheese Factory, the oldest in operation in Sardinia, produces Sardinian cheeses with dedication and passion, always seeking the taste and superior quality.Since its origins, Caseificio Garau uses only milk from Sardinian farms, in which the food is based on wild herbs and shrubs typical of the local vegetation. This is how the production of cheeses naturally rich in omega-3 fatty acids was born.The cellars are built as they were used in the XIX century using the local stone, called in dialect "su corasullu" (the blue heart, because of the color of the veins). They are the same walls, more than a meter thick, which still allow natural perspiration and constant temperature retention in different seasons, a treasure that can be almost compared to natural caves.In addition, their interior is permeated by a microclimate rich in scents, aromas and fragrances that, combined with the use of the table ultra aged pure fir, gives our cheeses a unique flavor, known and appreciated in various parts of the world: Europe, the USA and Japan are the last frontiers crossed with exports.
